Despite health promotions, such as MyPlate, MyPyramid and Eat Five a Day, children still aren’t consuming the recommended amount of fruits and vegetables. Two recent studies from the Journal of the Academy of Nutrition and Dietetics offer some insight to increase the consumption of fruits and vegetables in children.
The first study found that if the portion size of fruits and vegetables are larger, children are inclined to eat more of them. Thirty children ages 4-6 increased vegetable intake by 37 percent and fruit intake by 70 percent when portions were doubled.
Another study concluded that when children with sensitivities to bitterness are offered a dip, they are more likely to eat more vegetables. Bitter-sensitive children ate 80 percent more broccoli with dip than when served plain. Of those surveyed, 70 percent had bitterness sensitivity.
Encourage children to eat more fruits and vegetables buy serving them larger portions and providing dressing or dip to help with the bitter taste associated with some vegetables.

Dulcimer Classes Begin
Sharon Eggemeier, well-known local dulcimer artist, will be teaching a 6-week series of Mountain Dulcimer classes starting Tuesday, August 7 at the Carroll County Extension office. Participants will learn traditional dulcimer music in several strum styles, back up chords in the key of D, how to play “Jam Style” and a lot more about playing the Mountain dulcimer.
Cost is $70 for the 6 weeks. Some dulcimers will be available to rent for those without their own dulcimer. Persons having their own dulcimer should come ½ hour early to have their instrument checked.
Eggemeier has played dulcimer for over 25 years and is a founding member of the Hills of Kentucky Dulcimers. She is widely recognized and in demand to play at festivals and other occasions throughout Kentucky and other states. The Daniel Boone National Forest Park Service recently engaged Sharon to present a program and mini-teaching at Koomer Ridge Campground for four years.

Forks Over Knives
Americans have the most advanced medical technology, but are sicker than ever before. Over one-third of Americans are overweight, diabetes is on the rise, half of us are on at least one prescription drug and heart disease, cancer and stroke are the country’s three leading causes of death. Janet Mullins, PhD, Extension Food and Nutrition Specialist notes that “Forks Over Knives” is this generation’s “Super Size Me”.
“Forks Over Knives” is a shocking documentary. The Forks Over Knives film team examines the claim that for most people, disease can be prevented and reversed by switching to plant based diets and rejecting animal based and processed foods.
The film follows the journey of several patients with chronic conditions like heart disease and diabetes. Doctors prescribe a whole-food, plant based diet as the primary approach to treat their ailments. Viewers see participants’ challenges and triumphs as they strive to reverse damage caused by years of disease.
