I have mentioned in many of my past columns, with very fond memories, of the years we lived in Henryville, Ind.
Words cannot describe what my whole family feels about the devastation they have gone through, and yet they have picked themselves up and are going forward as best they can. Even though we moved many times when our children were growing up (due to job transfers), our children consider it their hometown.
We have many good friends there, people we truly cherish. People who have helped to form my children’s lives and people who have helped to form me. Hardworking, dedicated people who will stop and help you at the drop of a hat.
The first time we moved there, strangers would stop by our house and invite us to their church. It’s also the place where we learned to wave at people as we drove by because they did that for us, even if they didn’t know us.
We had regular weenie roasts with our neighbors down the road from us, and that’s when my children learned all about snipe hunts. We bought our first horse from the neighbor across the street, and he taught all of us how to care for her. A dog, a calf and two ducks came to us from different members of our church because they wanted their animals to go to a “Christian home.” I felt honored they considered us to care for these animals, but most of all, my children were thrilled to care for them.
The first time I ever spoke in front of a group of people I was president of the PTA. Now, some of you who know me well might think that it isn’t a good thing these days, but what I learned back then has certainly carried me on to this very day. You all know that I have no problem speaking in front of a group of people now, and maybe a little too much.
Our church smorgasbord was the perfect example of good cooking. We would have people from all over who would attend because the food was so good. The last one we attended was last fall, and I don’t think the prices have changed since we lived there and neither have the people. They are amazing.
To honor my friends in Henryville, I give you one of the most favorite cookie recipes from one of my PTA friends there, one that I have served on my cookie plates many times when I was catering. They are pretty, easy and very tasty. I give you:
Henryville Lemon Cookies
1 package lemon cake mix
4 ounces Cool Whip (room temperature)
Mix all ingredients together in medium bowl (do not beat). Roll about a teaspoon of batter (or larger, if you prefer) into a ball, then roll into confectioner’s sugar. Place each ball on a parchment paper lined cookie sheet, about 1-inch apart.
Bake at 350 degrees for about 8-10 minutes. You don’t want them to get brown, just a slight tinge of brown on the underside of the cookie. Just be sure to check them before the 8 minutes are up. Roll them again in the confectioner’s sugar after they are baked, but still slightly warm.
Note: These cookies are shown in the picture with the recipe card in front of the cookies. Notice how stained the recipe is, a sign of a very good recipe. This is so simple to make and easy for children to help with, as well. Enjoy!
