CARROLLTON, Ky. – Jim Cooper, a veteran of the restaurant business, has been selected as the new manager at General Butler State Resort Park, the Department of Parks announced recently.
Cooper is an Air Force veteran and licensed commercial pilot who was born and raised in Georgia. He earned a degree in aviation management from Southern Illinois University. Cooper spent more than 20 years with Waffle House as a manager and later as an owner and operator of four Waffle House restaurants in Frankfort, Versailles and Shelbyville.
