New Mexican eatery nearing completion

It’s been a slow process erecting the building, but a sign went up last week and El Nopal, a Mexican eatery, is definitely on the verge of opening.

El Nopal will locate in part of a new building under construction on the south side of the Butler Outlet Mall property.  

Mall owner Manny Patel said the restaurant will occupy a portion of the building, which also will have space for two other businesses.

Enrique Roman, owner of El Nopal, owns or is part owner of at least 10 restaurants in the Louisville area with the same name.

The menu is the same in each of El Nopal’s locations, and includes a variety of appetizers and sides and full lunch and dinner menus at moderate prices.

Bill Buzan, a Louisville Century 21 real-estate agent, assisted Roman through the purchase of the Carrollton location, said Roman is champing at the bit to get the establishment operating.

“He should take control of the building in two or three weeks, he hopes,” Buzan said last week. “The parking lot needs to be blacktopped and the inside finished, and then Enrique can get in and get his equipment in and get the business open.”

Roman has been in business in the Louisville area since 1992 and said he is anxious to get the Carrollton site open.  El Nopal is expected to bring about 18 jobs and will be open seven days a week.  

Roman said he may bring a few employees from his other restaurants, but also expects to hire locally.
