Wonderful food at home, out highlighted trip

We recently returned from visiting our son in Moore, Okla. Scott lives just three miles from Toby Keith, and yes we saw his home.

Keith has the largest American Flag flying in his yard that I have ever seen. That man is very well thought of in Oklahoma.

 It is always such a pleasure for us to visit Scott because he goes out of his way to prepare special meals for us. He does do a good job of impressing his mother with his culinary talents. Wonder where he learned how to cook so well? 

We arrived on a Friday afternoon, so dinner was at one of their favorite Mexican restaurants. It’s a great place to go, but they never stop bringing you food to eat. You wonder why your stomach feels so full when you really didn’t order a very big meal.

On Saturday morning, he impressed us with a “make your own breakfast tortilla.” He had prepared eggs and potatoes together, along with cooked and diced bacon, cheese, fresh cilantro, salsa and more. He also served a wonderful fruit salad made with frozen blueberries, mango, honey and fresh basil.  What a treat. The fruit was slightly thawed, then he added a bit of honey and chopped fresh basil to it. How refreshing too, especially since temperatures there were getting up to 104 degrees.

On Saturday night, he had marinated a small steak, grilled it to medium rare, then sliced it into thin strips. A fresh garden salad was made and along with other condiments of our choosing. We could make our own grilled steak salad.It was out of this world.

On Monday evening, we again went out to dinner and had a very interesting experience. We ate at Genghis Grill, the Mongolian Stir Fry. What you do is build your own bowl.  When you walk in, they give you a small metal bowl. Its purpose is to go through a buffet line of uncooked meats, vegetables, seasonings and sauces, filling this bowl full with your choices.  The waitress will even tell you to smash it down, so that you can get more in it. Once you get to the end, you make a choice of steamed rice, brown rice, fried rice, spiral pasta, tortillas or Udan noodles. The chef then cooks your food on the spot and serves it freshly made to you. These are the steps you go through and the items I chose to eat;

Step 1 (protein): chicken, shrimp.

Step 2 (seasoning): lemon pepper, dragon salt, granulated garlic, ginger.

Step 3 (veggies): baby corn, bamboo shoots, bok choy, tofu, celery, bean sprouts, mongo mix (which consists of red and green peppers and onions).

Step 4 (sauce): ginger citrus sauce, honey soy sauce

Step 5 (starch): brown rice

Basically, you can design your own meal and they will cook it. You can choose from calamari, chicken, ham, crab, scallops, shrimp, sliced beef, turkey, marinated steak, marinated white fish, pepperoni, pork and sausage.

You can let your mind go wild trying to guess all the vegetables they had available for your choosing.

The food was very good and especially so because it was so fresh. You can even try out my choices at home, if you want.
