The Carroll County Retired Teachers Association met Sept. 21 at Pat’s Place. Lunch was catered by Donna Parish, who prepared the meal and the fall decor for the tables.
Cassandra McBurney, president of CCRTA, called the meeting to order. First, the club recognized new retiree Debbie Cull. She talked about where she taught and for how many years. CCRTA presented her with a Kentucky Retired Teachers Association pin.

Relatives Raising Relatives Support Group will meet Thursday, Oct. 4 at the Carroll County Extension Office from 6-7 p.m. The guest speaker will be Passport.
Nearly 70,000 children in Kentucky are living in households headed by grandparents or another relative. Relatives Raising Relatives is a support group that meets on a regular basis and will provide individuals with an opportunity to ask questions, learn about great resources in the community and to meet other caregivers like yourself.
Nothing impresses more than a beautifully roasted piece of beef. Whether it’s a special day or just a week day, a properly cooked cut of beef can make any occasion special.
The trick to this recipe is the timing with the meat. You don’t want to cut into the meat before it has time to rest or all the delicious juice would run out. Giving the meat plenty of time to rest will allow the juices to redistribute throughout the meat, creating a tastier bite.
The horseradish sauce with the beef adds a nice sharp tone that helps cut through the richness.
