  • Temperature, time key to tasty beef rib roast

    Nothing impresses more than a beautifully roasted piece of beef. Whether it’s a special day or just a week day, a properly cooked cut of beef can make any occasion special.

    The trick to this recipe is the timing with the meat. You don’t want to cut into the meat before it has time to rest or all the delicious juice would run out. Giving the meat plenty of time to rest will allow the juices to redistribute throughout the meat, creating a tastier bite.

    The horseradish sauce with the beef adds a nice sharp tone that helps cut through the richness.

  • Perry graduates ‘Drive to Stay Alive’ Academy

    Carroll County High student Kassidy Perry was among 23  students throughout the state selected by Kentucky State Police to participate in the “Drive to Stay Alive” academy.  The program ran from Sept. 5-9 at KSP Headquarters in Frankfort. 

    The ‘Drive to Stay Alive’ program teaches the students safe driving techniques by KSP instructors with hands-on road driving and classroom exercises, including the dangers of driving impaired, seat belt safety, distracted and aggressive driving.
