  • Well it’s that time of year again; the season of our Savior’s birth. Christmas is a time of shopping, parties, plays and dinners with family and friends. Wow! What a busy season!

    I don’t know about you, but sometimes I come out of Christmas worn out. Is it possible that in all the busyness during this time, we’ve developed a rushed and complex approach to Christmas? It’s possible that in our push to do all that we do, we find ourselves not only exhausted, but also somewhat empty on the inside.

  • I am sorry that I had to cancel our pulled cream candy class. But, our instructor had a sudden serious illness so we could do nothing else. I am planning on re-scheduling after the holidays. This will be a nice and fun wintertime indoor activity. Watch my column and the Extension Homemakers newsletter for the new date.

  • It is Dec. 1 alreadyand only 24 more days until Christmas. Have you started thinking about what you will serve guests for a night of singing Christmas carols or just having a few of your neighbors over for a little get together? To help get you started, I have a few suggestions that have worked well for me, some of my favorites. I give you

    Ham and Cheese Quiche

    Makes 15 appetizers
    1 egg
    1/4 cup heavy whipping cream
    2 Tablespoons small diced cooked ham
    2 Tablespoons small diced red bell pepper

  • We are offering a holiday treat! On Tuesday evening, Dec. 7 from 6 – 8 p.m. I have asked Myrna Holloway to teach a special workshop on making Pulled Cream at our office. If you remember the puffy pillows of delightful sweetness that we associate with Christmas, and would like to learn to make it, please sign up at the Carroll County Extension office by Friday, Dec. 3. Bring an apron and your holiday spirit!

  • The Church of Jesus Christ of Latter Day Saints at 501 Main St., Carrollton will hold  “Our Savior’s Nativity”  Thursday and Friday, Dec. 2-3, from 5-8 p.m. and Saturday, Dec. 4 from 10 a.m. until 2 p.m.

  • I am writing this article from Cuernavaca, Mexico. I am doing an intensive Spanish course to help the Hispanic community at St. John Catholic Church.
    I am sure all will be glad to know about the life and culture in Mexico. I would like to share my experience with you. When I first started planning my Spanish study I had several options for accommodation. I asked my teacher to find a place close to a church so that I may be able to celebrate Mass every day. My teacher Esperanza, contacted the Benedictine Monks in Cuernavaca and they graciously accepted her request.
